Vegetable & Rigatoni Soup

I found this soup on Pinterest…modified it a bit to suit my family’s veggie tastes and it turned out great !  It is a perfect cold-weather, warm-your-tummy, healthy but hearty soup !

Vegetable & Rigatoni Soup

1 Tbsp olive oil
1 onion, chopped
2 cloves of garlic, minced
1 stalk celery, chopped
2 zucchini, chopped
3 carrots, chopped
1/2 bunch kale, chopped
1 Tbsp fresh thyme
Himalayan sea salt & pepper to taste
2 cans chopped tomatoes (28 ounces total)
1 box vegetable or chicken stock
1/2 pound rigatoni (cooked to al-dente)
In a large pan over medium heat, saute onion in olive oil for a few minutes.  Add garlic, celery, zucchini, carrots and saute until soft.  Add remaining ingredients (except pasta) and simmer 10 minutes.  Add cooked pasta and serve :)
I also made Melissa’s Chocolate Coconut Pecan Bars she posted a couple days ago…SO YUMMY I had a hard time stopping at 2 :) I also made some Chocolate Chip Banana Bread to send with the kids this week for teacher gifts…my house smelled pretty good today !
Sorry so short but this elf needs to get busy shopping and wrapping ! 12 Days til Christmas…YIKES !!!

Well it wasn't until my 30s that I realized those kind of diets are just a quick fix, not a lifestyle. I think all foods can fit into a healthy diet as long as you practice moderation. I have found that I feel and look my best when I am eating mostly plant-based foods. Not to say I won't indulge in a filet every now and again... but I find that I crave meat less and less ! I have recently been fascinated with trying new vegetarian recipes...I NEVER thought I could give up chicken...used it eat it everyday, but I actually don't miss it at all.
I am trying to pass these healthy eating habits onto my children so they can avoid some of the diseases related to unhealthy diets.
