Nutiva and Earth Balance Giveaway – and update from Kim

Ho, ho, ho!  I can’t believe it’s that time of year again and how quickly the time passes in November and December!  I hope everyone had a great Thanksgiving!

I did – and the best part was taking my Vegan Pumpkin Pie to my gracious Thanksgiving host’s house.  It was a hit!  We had some healthy foods and not-so-healthy foods, but it’s the holidays, right!?  It was a great time!  And for the record, I did not have a chocolate turkey, as shown below. :-)

Some of you want to know how the 28 day Engine 2 challenge ended up for me.  Well, not so well.  I started to feel really sick the last week – I was getting migraines almost every day.  My disclaimer is that I know I am allergic to a few foods, and during my Vegan challenge, I went ahead and ate them anyway.  Big mistake!  I need to go through a series of finding out what really affects me once again – but I am pretty sure I am really sensitive to some grains, ALL SEEDS, and most nuts.  It’s a sad day when a wannabe vegan realizes that.  I have some soul searching to do / or food testing on myself if you want to call it that.  I started reintegrating some “lean” meats/fish last week, and I was headache free for a week, until yesterday.  Not sure what the trigger was yesterday but I’d like to know.

My plan is to continue with ways that are “easy” for me through the holidays.  That doesn’t mean I am going to start stuffing myself with steak and hamburgers or anything processed.  It just means I’m going to eat what I know is “healthy” for me (and definitely stay mostly plant-based), and then start some experimentation beginning January 2.  Two years ago, I went through The Love Cleanse – which is what I am going to do again at the beginning of the year.  It was the best I’ve ever felt – EVER.  It’s basically a process of “cleansing” and then reintegrating food groups, one by one, tracking how each food group makes you feel.  Check out her website – it’s a pretty awesome process.  After that, I plan to do the Engine 2 again – only this time avoiding what I know are known triggers that make me feel awful.  Like walnuts…seeds….etc.  It is hard to try to eat vegan and also have food sensitivities to grains – I can safely say that.  But I need to know what makes me feel bad before giving it another shot.  Then, I really want to try the 30 Day Thrive Diet.  Healthy diet, diet healthy; those are my words….. beginning January 2.  I’m sorry to those of you who I let down and I promise to have a complete re-do at the beginning of the year!

So, between headaches, having a houseful during Thanksgiving week, then a crashed computer for almost 2 weeks, and now a kitchen remodel, it’s been a little hectic here.

    Do you have the instruction to create a Veggie Turkey? I want to make one for Christmas.

      Hi Kim! My sister made it and here is what she had to say about it: It is a 1/2 cabbage for the base and summer squash ‘head’ all held together with toothpicks. With the exception of the carrots, be sure to trim the tip of each toothpick on the end that pokes out of the cabbage. The eyes are olives and beak/feet are orange bell peppers. Hope that helps!
