Happy Thanksgiving week everyone !
Bob’s Red Mill was gracious enough to send me a few of their products to sample. I got the Vegi Soup Mix, Muesli and the Bran Apple Muffin Mix.
The soup was amazing!!! The mix is a combo of split peas, lentils, barley and some wheat alphabet pasta…my kids loved trying to spell their name out in their soup And it was so incredibly easy. I just sauteed an onion, a few carrots and 2 stalks of celery in a little olive oil and then added about 2.5 cups of the soup mix, 2 boxes of veggie broth and simmered for 45 minutes. I added some S&P to taste. The recipe on the bag says to blend until smooth and add milk but I like my soup a little chunky and decided to leave the milk out. So delish…I will absolutely be buying this again…can’t wait to have leftovers for lunch tomorrow !
PS. I added some garam masala to mine just because I love the flavor with lentils but wasn’t sure if my family would like it … I tried both ways and loved both. So if you like that spice, add a teaspoon to yours !
For the muesli, I soaked 1 cup mix in 2 cups almond milk…we had it for breakfast and my kids loved it ! So hearty and healthy…and my 5 year old asked for some for dessert tonight…score! I am going to sprinkle it over their yogurt in the morning. There is also a chocolate chip muesli cookie recipe (no butter!) that I will make with the kids this week while they’re out of school and I’ll get back to you on how that turns out!
The Bran Apple Muffin mix I didn’t have as much luck with. The recipe called for molasses which I didn’t have so I substituted brown rice syrup….no bueno ! I am going to try them again with molasses though and they also have an apple bran cookie recipe that I will give a try with the remaining mix.
