Happy Monday! I hope everyone had a really great weekend! I haven’t posted in a while but I have a few legitimate excuses. First, I haven’t wanted to try any new recipes because our refrigerator broke almost 2 weeks ago, so I haven’t felt like doing much besides the basics in the kitchen! We are lucky to have a refrigerator in the garage, but yesterday as I was unloading groceries (in the garage), it dawned on me just how NOT fun it is squishing the Kale above the beer. Garage fridge used to = beer fridge. Now, it is beer fridge with fresh veggies crammed all around it! In the spirit of saving around $800, my husband ordered the new fridge online. Great deal, but not great shipping practices! We SHOULD have it by the end of the week. Cross your fingers, or I may never post again, due to death by impatience.
Second, I had to travel a little. My first trip was to Martindale, TX, where I got to watch my fabulous race-car-dad, brother-in-law, and husband in a team longevity race, where they placed 3rd! It’s a super fun tradition and total bonding experience for the boys. And, I had fun helping in the Pit. :) It’s a blast. My dad is kind of a big deal in the community of Porsche 356 Restorations. It’s his hobby, passion, and job. But, this is a food/health blog, so I won’t bore you with the details! :)
My second trip was for business, just up the road a few hours to Dallas. Instead of staying in a yucky hotel, I decided to stay with HealthyMamma Jennifer! Who wouldn’t take that as an option! :) We had only a few short hours together, but had a blast as usual! We watched a little Cowboys victory, chatted about anything and everything, had a delicious meal of Lentil Soup and Kale Salad, and finally went to bed after a little vino! The next morning told me that I am really not all that okay with high tannin wines. They just don’t treat me all that well! I won’t bore you with that story, either. ;-)
And my last excuse….we have been really busy talking to companies that we love, to try to get more giveaways for you, so you can try the things we love as well!
