Roasted Tomato Soup & Ladybug Bars

Happy October !


Happy October everyone (well ok technically it’s Saturday but I am mentally already in October) !  Our household is in full swing HALLOWEEN mode ! Kids and I just finished decorating the house … it’s one of our favorite holidays … well besides Thanksgiving and Christmas … speaking of, I never changed my doorbell ringer from “We wish you a Merry Christmas”  … what’s another couple months ;-)

Anywho, even though it reached 100 degrees today, the Fall season always puts me in the mood to be in the kitchen !
So today I made a delicious roasted tomato coconut soup…I found it on (GREAT vegan website…I’m not even a vegan and I LOVE her recipes!).  The soup is seriously like a party in your mouth…flavors are amazing ! I think I will top it with some croutons next time per her suggestion to give it a little crunch.

I also made Melissa’s Ladybug bars.  We have a tennis match tomorrow and I’m in charge of snacks this week…so instead of buying some crap granola bars full of preservatives and HFCs…I thought I’d make something healthy.  My kids had one when they got home from school and before they finished the first one they were asking for a second ! My daughter even asked for a 3rd right before dinner (had to decline)!

These are SOOOO good and I love the egg substitution she used…I may never use eggs in baked goods again ! The ground chia seeds soaked in water were perfect consistentcy !  By the way, if you’ve never tried chia seeds, they are the new superfood ! And Nutiva foods just donated a bag for one of our next giveaways….check back for details !!!

And for those of you wondering, I do have a box of store-bought granola bars to take to the match in case anyone is leary of eating a stranger’s homemade bars HAHA But I guarantee you Ladybugs are WAY better!!!!

Well it wasn't until my 30s that I realized those kind of diets are just a quick fix, not a lifestyle. I think all foods can fit into a healthy diet as long as you practice moderation. I have found that I feel and look my best when I am eating mostly plant-based foods. Not to say I won't indulge in a filet every now and again... but I find that I crave meat less and less ! I have recently been fascinated with trying new vegetarian recipes...I NEVER thought I could give up chicken...used it eat it everyday, but I actually don't miss it at all.
I am trying to pass these healthy eating habits onto my children so they can avoid some of the diseases related to unhealthy diets.

    Your ladybug bars look delish!! :) What dried fruit, nut, or morsel combo did you use? I’m going to bake some more this weekend and I want to try a new combo. :) xo!

    I used raisins and dark choco chips ! But love the idea of playing around with them…I may do cranberries next time :)
