Cannelini & Kale Soup, Live/Raw Foods and Smartini time!

Happy Thursday everyone !!!

Just discovered this awesome line of raw, live food.  ”Go Raw”.  If you’re not familiar, raw food contains enzymes which aid in the digestion and absorption of food.  Cooking food over 116 degrees destroys all these enzymes so you’re getting a lot more nutrients by eating live/raw.  Go Raw makes cookies, sprouted nuts, bars, chocolate, flax snacks and more !  You can find them on Amazon or your local health food store.  I found the line at Central Market.  I love these sunflower seeds…I keep them in baggies in my car, workout bag, tennis bag, etc.  They are a great snack when you’re on-the-go !

And onto one of my favorite new soups…it is so flavorful and easy !  I love it with kale, however my family is not a huge kale fan (actually just my daughter and husband…my son like me loves kale!) , so I substituted the kale this time for a couple carrots and stalks of celery.  It is great either way and so easy!!!

Bean and Kale Soup

Cannelini & Kale Soup
Recipe Type: Main

Total time: 50 mins
Serves: 6-8
Ingredients
  • 3 slices turkey bacon, cut into 1/4 inch pieces
  • 1 small onion
  • 1 clove garlic
  • 3 cups chopped kale (or 2 carrots and 2 stalks celery)
  • 1/4 tsp black pepper
  • 1/4 tsp salt
  • 2 cans cannelini beans
  • 1 box (32 ounces) veggie or chicken broth
Instructions
  1. Cook bacon, garlic and onion over medium-high heat for 5-10 minutes. Add kale and the rest of the ingredients. Cover and simmer for 30 minutes. I like to use my immersion blender for a few seconds before serving to make this soup a little creamy yet still have substance. I served it with toasted pita bread.

I am the mother of 2 beautiful children, Presley-7 and Cash-5 and married to an amazing husband and father, Todd. I have always thought of myself as a healthy person...I've always loved sports, working out and eating healthy. However, looking back, I've actually had a lot of unhealthy habits. I've tried every diet out there : Low fat (How did I think eating a box of fat free snackwells cookies was healthy?), Low carb (can you say fried pork skins GROSS)... as well as a long stint with disordered eating which started in college as a way to avoid those "freshman 15".
Well it wasn't until my 30s that I realized those kind of diets are just a quick fix, not a lifestyle. I think all foods can fit into a healthy diet as long as you practice moderation. I have found that I feel and look my best when I am eating mostly plant-based foods. Not to say I won't indulge in a filet every now and again... but I find that I crave meat less and less ! I have recently been fascinated with trying new vegetarian recipes...I NEVER thought I could give up chicken...used it eat it everyday, but I actually don't miss it at all.
I am trying to pass these healthy eating habits onto my children so they can avoid some of the diseases related to unhealthy diets.
