One of my favorite things about Sundays is that my husband almost always uses his smoker or grill for dinner !
Which means easy on healthy mamma
He does the meat/fish/chicken… and I usually steam or bake some veggies, and add a baked sweet potato and voila…dinner is served ! And I REALLY love when he smokes chickens because it means I have another dinner the next evening without much effort on my part
Here is one of my family’s favorite meals with one of daddy’s leftover smoked chickens (You can also use a rotisserie chicken or some baked skinless chicken breasts … would be delicious too !)
1 onion
4 carrots
4 celery stalks
1/2 pound green beans
2 boxes organic chicken broth
1 smoked chicken (or rotisserie, or 4-5 cooked chicken breasts)
1 bag whole wheat noodles, cooked
1 cup frozen corn
2TBS Arrowroot or Cornstarch, mixed in 2 TBS water for thickening. OR 2 cans reduced fat cream of chicken (I don’t use this, but many people do, so I am leaving it in for those who want a creamier version.)
Saute an onion, with carrots, celery, and green beans for 4 minutes.
Add chicken, broth, corn, and your thickener – and simmer for 30 minutes. Add cooked noodles and you are done …. Serve with whole wheat crackers or some warm crusty bread !

After you pick your chicken bones clean, toss them on a cookie sheet and drizzle a little olive oil on them and cover lightly with foil. Put in the oven at around 400 degrees for 30-40 minutes to roast them a bit further…then simmer them with some left over veggies for an awesome broth with a deeper flavor
