I hope everyone is having a great weekend! Recently, we’ve tried this most AWESOME recipe, so thought I would share! It’s a busy weekend, so this will be a quick post, but this is sooooooo good, I wanted to go ahead and put it out there! We found this recipe on the CleanEating.com website and everyone loved it, including the kids!

Wonderful veggie stuffed mushroom recipe!
Ingredients
- 4 Large portobello mushrooms
- 1 teaspoon EVOO
- 1 zucchini, chopped
- 1/2 red onion, chopped
- 1 Tablespoon minced garlic
- 1 Tablespoon balsamic vinegar
- 1 medium tomato, chopped
- 2 roasted red peppers, chopped
- handfull fresh basil, chopped
- 1/2 cup whole wheat bread crumbs
- 1/2 cup parmesan or romano cheese
- sea salt and ground pepper to taste
Instructions
- Heat oven to 375.
- Clean mushrooms and remove stems.
- Heat oil in skillet.
- Chop stems and add to skillet with zucchini, onion, garlic and vinegar.
- Saute 5-7 minutes until onion and zucchini are soft. Add tomato and roasted pepper and heat through, about 3 minutes.
- Remove mixture and transfer to a bowl.
- Stir in basil, bread crumbs and cheese. Season with salt and pepper.
- Fill mushroom tops with veggie mixture and bake 15 minutes or until mushrooms look tender and cheese is melted.
