Quinoa Stuffed Poblano Peppers

My son’s caregiver is one of the most amazing and inspiring people I know.   Daily, she takes excellent care of my sweet son as I am now back at work, she is an avid runner, an excellent mother to her own two children and an amazing cook!   Each time I come to pick him up, I know there will be incredible smells coming from her kitchen. She always cooks fresh, healthy and very flavorful meals! Lucky for me, she often shares some amazing food with our family.

Tonight, she sent home a delicious eggplant dish with my husband.  I’ll have to find out this recipe and will post it later!

Earlier this spring, Gema (the G is pronounced like an H) made stuffed Poblano peppers that I can’t forget!   While this recipe isn’t exactly Gema’s (we have plans for me to have some cooking lessons with her later), in my search, I found something absolutely delicious.  This twist was tweaked a bit from several recipes I found online and was a huge hit with my healthy hubby and my kids (we omitted the poblano for them).

*A tip to begin with…wear gloves or rinse your hands well after cleaning the peppers!  Only HOT and Healthy Mammas should attempt! :) *

Quinoa Stuffed Poblano Peppers

  • 1 C. quinoa- cooked
  • 1 can Red kidney beans
  • 1/2 C. frozen corn
  • 1 medium tomato diced
  • 1 small zucchini diced
  • 1 clove minced garlic
  • 1/2 C. cilantro chopped
  • 1 t. EVOO
  • 1/2 t. sea salt
  • 1/2 t. pepper
  • cooking spray
  • 4 large poblano peppers- washed and seeds cleaned out
  • 8 T shredded cheddar  (Use Vegan Cheese if you would like)
  • sour cream, regular or Vegan (optional)

Preheat oven to 375 and spray bottom of baking dish.  Mix all ingredients except peppers, cheese and sour cream.  Stuff mixture into the poblanos and bake covered for 45 minutes.  Uncover, top with cheese and bake another 10 minutes.  Serve with sour cream.  Delicious!

With all of this yummy, healthy cooking, I have to admit that I’ve indulged in a bit of a guilty pleasure this week…but oh, so worth it!   With good friends and the premiere of the pretty tasteless Bachelor Pad, what’s a girl to do?

Monday night, some girlfriends and I said cheers to good friends, bad tv (yes, all 3 hours) and one of my favorite (and easy) strawberry salads- mixed greens, feta cheese, strawberries, honey glazed pecans and Lighthouse Raspberry Walnut dressing.
