Greetings from Crested Butte, CO!

Colorado in the summer…there is truly no place on earth I’d rather be! Wintertime in the mountains is wonderful…skiing, snowboarding, all of the fun to be had in the snow…but, summertime in Colorado most definitely has my heart!

We started our trip off this year with a wonderful visit with HealthyMamma Jenny and her family in Rye, CO. It was an AMAZING time with people that I love! We all had SO much fun…fabulous food, fun by the fireside, tons of laughs and giggles from the adults and from the kids…it could not have been any better! We were actually a little sad to leave…next year we are going to have to plan on spending more than one night with the Baldwins in Rye!

ATV rides for the girls! :)

a well deserved vacation for my hubby and me!

We’ve been waking up here in Crested Butte to temperatures in the high 30′s…CRAZY considering I’ve spent the entire summer thus far in Austin with a record number of triple digit days! I can’t even begin to explain how nice the weather alone has been on this trip! By the time I get out for a hike/run around 10:00am, the weather is sunny and in the mid to high 60′s…absolute bliss! :)

keeping warm on these CO mornings :)

My in-laws…Mimi and Papa Joe…are here in Crested Butte with us…and we are loving it! I adore my in-laws…we all love spending as much time as possible with them…so we are lucky that we could vacation here with them this summer. We’ve enjoyed walking around town, a concert at one of Crested Butte’s many beautiful parks, celebrating sweet Mia’s 6th birthday, and simply spending time together as a family. :)

fun times with Mimi and Papa Joe :)

I have not spent much time in the kitchen while we’ve been here…other than making a few tried and true recipes that I’ve already shared with you all…like my homemade granola with almond milk and fresh fruit for breakfast…yummo!!

my pre-trail run fuel

We have lots of fun plans in store for us this week. I’ll be posting again before we depart and head south.  I hope you are all having a wonderful summer yourselves…full of fun, relaxation, and family time.  I’ll leave you with a couple of photos that I took yesterday on my morning trail run…run for a while, stop to take a photo, run for a while, stop to take a photo…in my mind, that’s the best kind of interval training there is! ;)

Happy trails! :)

About Melissa

I've been blessed with an amazing husband, Tyler and two amazing children, Mia who is 5yrs old and Luke who is 3yrs old. Our entire family has a passion for food. We see food as a means of nutrition, something wonderful to enjoy and indulge in, and meals...if we are doing them right...serve as a fun social experience too! Food definitely brings this family together!
Our family, as a whole, eats a mostly vegetarian diet...although we do consume meat and fish, on occasion. So, I'm always looking for and trying out new vegetarian and vegan recipes that hopefully all of us will enjoy.
Besides food, we are passionate about gardening. We have an organic veggie garden in our backyard that provides a good portion of the veggies that we consume. The kids love to jump in and get their hands dirty and it's crazy how much they already know about gardening! It makes my husband and me so happy to think that they will (hopefully) carry this experience and lifestyle into their futures.
I'm also passionate about learning new ways to lead a healthy lifestyle and provide one for my family...and, I love sharing these ideas with anyone who is interested in hearing about them! So, as I discover recipes and other healthy happy things I will share them...and when you discover some yourself...I'd love for you to share them with me! :)
