Colorado in the summer…there is truly no place on earth I’d rather be! Wintertime in the mountains is wonderful…skiing, snowboarding, all of the fun to be had in the snow…but, summertime in Colorado most definitely has my heart!
We started our trip off this year with a wonderful visit with HealthyMamma Jenny and her family in Rye, CO. It was an AMAZING time with people that I love! We all had SO much fun…fabulous food, fun by the fireside, tons of laughs and giggles from the adults and from the kids…it could not have been any better! We were actually a little sad to leave…next year we are going to have to plan on spending more than one night with the Baldwins in Rye!
We’ve been waking up here in Crested Butte to temperatures in the high 30′s…CRAZY considering I’ve spent the entire summer thus far in Austin with a record number of triple digit days! I can’t even begin to explain how nice the weather alone has been on this trip! By the time I get out for a hike/run around 10:00am, the weather is sunny and in the mid to high 60′s…absolute bliss!
My in-laws…Mimi and Papa Joe…are here in Crested Butte with us…and we are loving it! I adore my in-laws…we all love spending as much time as possible with them…so we are lucky that we could vacation here with them this summer. We’ve enjoyed walking around town, a concert at one of Crested Butte’s many beautiful parks, celebrating sweet Mia’s 6th birthday, and simply spending time together as a family.
I have not spent much time in the kitchen while we’ve been here…other than making a few tried and true recipes that I’ve already shared with you all…like my homemade granola with almond milk and fresh fruit for breakfast…yummo!!
We have lots of fun plans in store for us this week. I’ll be posting again before we depart and head south. I hope you are all having a wonderful summer yourselves…full of fun, relaxation, and family time.
