Choco Smoothie and Choco “Ice Cream”!

Our 14 year old came home from camp and had a GREAT time, so we were not only happy to see him, but ecstatic that he had such a good time! When he went a few years ago, he was still too young, got very homesick, and did not have a very good time at all! This time around = perfection and he can’t wait to go back next year!

On another note, this morning I had a “green” smoothie that I have been having several mornings week, so I thought I would share the recipe:
  • 1 scoop Chocolate Vega or Amazing Grass Chocolate SuperFood
  • Handful of Spinach
  • 1 Frozen Banana and a few frozen blueberries
  • 1/4 cup non-instant oats
  • 1 cup (or a little more) of your choice of Milk (I have been using Almond Milk)

It’s great, very thick, and will totally fill you up until lunch!

Speaking of lunch, I had an Amy’s burrito – I LOVE Amy’s products – look at the ingredients in this Gluten Free, Dairy Free Burrito – NO junk!!
Organic pinto beans, filtered water, organic brown rice, organic garbanzo flour, organic tomato puree, organic potato starch, expeller pressed high oleic safflower and/or sunflower oil, organic onions, organic tapioca starch, organic bell peppers, organic sorghum flour, organic sweet rice flour, organic evaporated cane juice, sea salt, spices, organic garlic.

For dinner, I just had to try Melissa’s Mexi-Cali Burritos! Guess I had a lot of burritos today! :) We loved the them! After eating one, I made a small change and took the Bean/Onion/Corn mixture and blended it in my Vitamix on the first speed! Although it took out a lot of the texture, I liked it a lot better. I had not made my onions small enough, so this really did the trick for me. There was still a lot of texture in the Avocado/lettuce (I used Kale) and tomatoes – so still I loved it – even more! It was a hit with everyone (ok, not my 5 year old)!

MexiCali Burritos!

After dinner, I wanted to see if I could try to sneak some veggies into my picky 5 year old by making chocolate/berry “ice cream”. It did NOT work – he was so not fooled! He might be the pickiest child on the planet! I also think he saw me making it – as much as I tried to keep him out of the kitchen, he kept coming by to see what I was doing!

HOWEVER, the recipe is great, HealthyDaddy and I LOVED it so I thought the recipe was worthy of sharing. :) I got this recipe off of Kris Carr’s Crazy Sexy Life website and made a couple tweaks to it.
Chocolate-Berry “Ice Cream”
  • 2 large handfuls of spinach
  • 1/2 Avocado
  • 2 TBS Raw Cacao Powder
  • 2 tsp Vanilla
  • 3 or 4 large frozen strawberries (or any berry will do – about 1/2 cup)
  • 1.5 cups water
  • 2 cups ice
  • 2 or 3 droppers of liquid stevia OR about 5 TBS of Agave (I used Agave and even added a little more once it was blended)
When I first blended it, it was perfect “ice cream” consistency.
Since I wanted to make it a little sweeter (in hopes that Zane would like it), I kept adding agave and re-blending it, which made it turn out more of a really thick shake consistency. Either way, it was good!

I”m off for an evening run – it’s down to 99 degrees here in Austin! I would much rather run at 99 degrees at night, than 80 degrees in the morning, though, because as I run it gets cooler and the wind kicks in…and as a bonus, I get to watch the sunset on the lake. If I’m really lucky, I get to run through a sprinkler! In the morning, it just gets HOTTER as I run, with no wind, and usually no sprinklers, so my preference is to run in the evening!

    Cutest picture EVER of Zane and Ella…love it!! :)
    Our burrito filling was really creamy…other than the corn. Of course, I dice my onion so small that it practically disappears! ;)
