“B”LT’s & Orange Sesame Kale Salad

We are about to watch the World Cup… GO USA !!!!!!!!!!!

We’ve been hanging out at the pool all day and I was trying to think of something besides turkey sandwiches to serve the family for lunch.  It’s been a while since I made a BLT so I decided to whip some up “healthymamma” style.  For my husband and kids, I spread homemade red bell pepper hummus (see my easy recipe!)  on some toasted whole wheat bread and layered it with turkey bacon, tomatoes, lettuce, and avocado and S&P …. delish ! I’m not a fan of the “B” in BLTs which is where the avocado came in.  Served with Kimmy’s cucumber snack (see recipes) … I added a few sliced tomatoes to her recipe because I had some extras laying around and a bit of sweetener before marinating overnight. YUM!

I’ve been addicted to Central Market’s kale salad for the past month or so.  As you may have read, we healthy mammas love us some kale ! As Mitchell on Modern Family says , “Kale is the new Spinach!” And I am not one to argue with Mitchell ;-) I go through about 3 or 4 bunches of it a week…kale chips, kale salads, kale in my smoothies…I love it.  Kale is widely recognized as an incredibly nutritious vegetable for its low fat, no cholesterol and powerful anti-oxidant properties.

So I decided to re-create Central Market’s kale salad at home. Theirs has almonds, pepitas (pumpkin seeds), cranberries and crystalized ginger…they told me the dressing was an “orange sesame” dressing.  So here is what I came up with and it is delicious !!!  I made it on Friday and have been eating it all weekend :)   We have other kale salad recipes on here so if you are a kale fan like us,  check them out !

Orange Sesame Kale Salad

Wash 1 bunch of kale and strip leaves off of stems.  Dry and cut into bite-sized pieces.

Whisk together :

1/4 cup orange juice

1/4 cup apple cider vinegar

2 T sugar

2 T soy sauce or Tamari (I prefer Tamari…it’s gluten-free and doesn’t make me as bloated as soy sauce does!)

1 T sesame oil

Pour dressing over kale and toss in :

2 T toasted almonds

1/4 cup pepitas (pumpkin seeds)

1/4 cup cranberries

crystalized ginger (optional)

My husband (who’s not too big of a kale fan) even liked it !   My son tried it and I asked him if it got a thumbs up or thumbs down….

Well it wasn't until my 30s that I realized those kind of diets are just a quick fix, not a lifestyle. I think all foods can fit into a healthy diet as long as you practice moderation. I have found that I feel and look my best when I am eating mostly plant-based foods. Not to say I won't indulge in a filet every now and again... but I find that I crave meat less and less ! I have recently been fascinated with trying new vegetarian recipes...I NEVER thought I could give up chicken...used it eat it everyday, but I actually don't miss it at all.
I am trying to pass these healthy eating habits onto my children so they can avoid some of the diseases related to unhealthy diets.

    Love it! I make hummus/tomato sandwiches all the time. They are the best! Kale chips are a favorite of mine to :)
