Vitamix Frosty Summer Cosmo

Happy Friday!!!  In honor of it being Friday, I thought I would post my new favorite drink.  Now, it might not be the healthiest drink in the world, but a HealthyMommy has to do what she’s got to do sometimes.  :)

I’ve made this several times – I cannot explain how easy it is in the Vitamix!  The cool thing about the Vitamix is that you do not have to worry about the consistency of your drinks when you blend them.  The best way to describe the outcome is like the consistency of slurpees!  If you do not own a Vitamix, run to the nearest Vitamix store!!  :)   Not really, you can just go to this front page and order one through our link.  They also have them on Amazon, but it seems like they are older models and just as expensive.  We HealthyMammas like to get the refurbished ones – they are cheaper, still come with the 7 year warranty, and just as good as a brand new one, in my opinion.  I got mine last month, and the manufacturer’s date on the bottom of it is February 2011.  So, it’s not like you are getting some crusty old worn out model.  :)  Just one that has been used in a show or something like that.  With a 7 year warranty, you really cannot go wrong.

HealthyJenny and HealthyMelissa have both given this drink a thumbs UP, so I thought it was worth sharing!!  The recipe is in the Vitamix cookbook (comes with the Vitamix).  I can’t wait to try EVERY recipe in there – seriously, there are tons.

Vitamix Summer Cosmo

Frosted Cosmopolitan (somewhat revised)

Ingredients

  • 1/4 cup cranberry juice
  • 2 oz vodka
  • 1 oz triple sec
  • 1 tablespoon sweetened lime juice (Original calls for 2 TBSP, but I like it with just one. I used Rose’s but found out it has HFCS in it!! Eek! Find something else, or just use lime juice with a little agave!)
  • 1 cup ice cubes (I usually actually use about 1.5 cups)
  • Blend in your Vitamix for about 15 seconds or until desired consistency and enjoy!!!!

On another note, I must keep this short.  I’ve had some serious WRITERS block this week (not to mention what felt like Vertigo??? for a few days??) – and my in-laws are headed here from New Mexico for a visit so I must get ready!  :)  WHAT will I cook this weekend for them?  Any suggestions?  If not, I suppose there are plenty from this website to choose from.  THAT was the reason for starting this blog.  To keep all of our recipes in one place, and to share them with our friends.

    Just recieved my refurbished vitamix! Ready to rock n roll! So excited. I’m in total research mode right now and what freaks me out about this vegetarian/vegan thing is the amount of carbs. Pasta, mainly. How did you wrap your head around that after years of being told – drop the pasta?!?

    Hi Sunny! I totally understand how you feel, but what you need to make sure of is just that you are eating whole grains – as natural and unrefined as possible. Eat a lot of Quinoa!! It is one of natures most perfect foods!! (I have a post on it somewhere, I believe – be sure to search our site and also our RecipePage for Quinoa). When you think about it, it just makes more sense for your body to break down a natural grain, vs. some animal muscle and fat. :) You should present your question to Forks Over Knives facebook page too and see what they (and the community) have to say about it. They have a really active page. Hope this helps and keep us posted in your journey!! :) ~Kim

    Thank you so much for taking my question and running with it. I have watched Forks & Knives, which is how I found you guys!! And Kris Carr and Colleen Patrick Goudreau, Dr. Furhman. So many great vegan advocates out there (although Alicia Silverstone was my first “hmmm” moment). I am a mom (13, 9 yr olds) and wife who is passionate about health and nutrition. I believe that food is the answer to most ailments – not medication. But I have not been able to go full board into it vegetarian/veganism. Like I said, I’m researching researching researching. And in the meantime, going whole food, organic and as CLEAN as I can be. Reading about Paleo diet too (meaning, lifestyle not diet). Admit it’s very confusing with so many ways to go, as well as so enlightening. And I know it’s all good information and maybe in the end its a combination of things….. Love your site and that you girls are putting it out there. WOMEN ROCK.
