We’ve ALL made this and LOVE IT!!! So, so good. At the end, you may need to add a little extra broth.

| Red Lentil Soup |
- 1 tsp olive oil
- 1.5 cups chopped red onion
- 2-3 chopped garlic cloves
- salt & pepper to taste
- 1 can diced tomatoes
- 2 big handfuls fresh spinach, chopped
- 3 carrots, chopped
- 2 cups dry red and/or green lentils (I like to use a blend; the green lentils will be more firm in the end)
- 32 ounces chicken or veggie broth
- 32 ounces water
- 2 tsp dried basil
- 1.5 tsp dried cardamom
- 1 tsp dried cumin
- 1/2 tsp ground cayenne
- 1/2 tsp curry powder
- Heat oil in a large pot over medium heat, and cook onion and garlic until golden brown.
- Season with salt and pepper.
- Add remaining ingredients and bring to a boil.
- Reduce heat and simmer for 25 minutes, stirring occasionally until lentils are tender.
- Serve with some crusty bread and Enjoy!
