Mediterranean Chicken

This is our good friend, Louise’s family recipe.

It is another one of my go-to recipes…we have it about every¬†2 or 3 weeks.

Mediterranean Chicken

  • 2 garlic clove – minced or chopped
  • 1 chopped onion
  • 2 T olive oil
  • 2 pounds boneless, skinless organic chicken breasts, cut into pieces
  • 3 cups organic chicken broth
  • 1 cup brown rice, uncooked
  • 1 tsp oregano
  • 1 bay leaf
  • salt and pepper to taste
  1. Lightly brown garlic and onion in olive oil.
  2. Add chicken pieces and brown well.
  3. Stir in broth, rice, oregano and bay leaf.
  4. Bring to a boil.
  5. Cover and simmer until chicken is tender and water is absorbed, about 45 minutes (I sometimes add more broth at the end if I have longer to cook it) .
  6. Remove bay leaf and season with salt and pepper.
  7. Serve with steamed broccoli or another green veggie of your choice !

I have always thought of myself as a healthy person...I've always loved sports, working out and eating healthy. However, looking back, I've actually had a lot of unhealthy habits. I've tried every diet out there : Low fat (How did I think eating a box of fat free snackwells cookies was healthy?), Low carb (can you say fried pork skins GROSS)... as well as a long stint with disordered eating which started in college as a way to avoid those "freshman 15".
Well it wasn't until my 30s that I realized those kind of diets are just a quick fix, not a lifestyle. I think all foods can fit into a healthy diet as long as you practice moderation. I have found that I feel and look my best when I am eating mostly plant-based foods. Not to say I won't indulge in a filet every now and again... but I find that I crave meat less and less ! I have recently been fascinated with trying new vegetarian recipes...I NEVER thought I could give up chicken...used it eat it everyday, but I actually don't miss it at all.
I am trying to pass these healthy eating habits onto my children so they can avoid some of the diseases related to unhealthy diets.

    This was a hit with the whole family…even my 16 month old gobbled it down. I may try it with Quinoa next go round a a few capers too! I especially loved the quick prep and easy cleanup.
